Guacamole Bombs with Avocado and Tortilla Coating
Ingredients
- 2 avocados
- 3 tbsp onion
- 3 tbsp cilantro
- 2 garlic cloves
- 1 lime
- 1/2 tbsp chili powder
- 1/4 tbsp cumin
- A pinch of salt and pepper
- 1 cup non-dairy milk
- 1/4 cup flour of choice
- 1 cup corn tortilla chips
- Oil for frying
Preparation
Mix together mashed avocado, onion, cilantro, lime juice, chili powder, cumin, salt and pepper.
Scoop about 2 tbsp of guacamole onto a parchment-lined pan and freeze until solid.
Meanwhile, whisk together non-dairy milk and flour to make batter.
Dip each frozen guacamole bomb into the batter and roll in crushed tortilla chips until well coated.
Heat oil over medium-high heat and fry each bomb until golden, about 2 minutes each, avoiding overcrowding to prevent explosions.
Note: This is one of the rare times deep frying is used, but it's worth it for the flavor.
