Guacamole Bombs with Avocado and Tortilla Coating

Ingredients

  • 2 avocados
  • 3 tbsp onion
  • 3 tbsp cilantro
  • 2 garlic cloves
  • 1 lime
  • 1/2 tbsp chili powder
  • 1/4 tbsp cumin
  • A pinch of salt and pepper
  • 1 cup non-dairy milk
  • 1/4 cup flour of choice
  • 1 cup corn tortilla chips
  • Oil for frying

Preparation

  1. Mix together mashed avocado, onion, cilantro, lime juice, chili powder, cumin, salt and pepper.

  2. Scoop about 2 tbsp of guacamole onto a parchment-lined pan and freeze until solid.

  3. Meanwhile, whisk together non-dairy milk and flour to make batter.

  4. Dip each frozen guacamole bomb into the batter and roll in crushed tortilla chips until well coated.

  5. Heat oil over medium-high heat and fry each bomb until golden, about 2 minutes each, avoiding overcrowding to prevent explosions.

  6. Note: This is one of the rare times deep frying is used, but it's worth it for the flavor.
