Hawaiian Baked Sushi (
Ingredients
- 3 14 oz. cans hearts of palm, drained & minced
- 3 tblsp organic sugar
- 1/2 c vegan mayo
- 1/2 c vegan sour cream (i used tofutti)
- 1/3 c furikake
- seasoned roasted seaweed laver (the korean kind)

- preheat oven to 350°f
- salad prep
- 2 add mayo and sour cream, mix well and set aside.
- assembly
- 2. sprinkle a thin layer of furikake on top of rice.
- 3. spread layer of salad mixture on top, covering up all rice.
Preparation
Preheat oven to 350°f
Salad prep
In a mixing bowl, add sugar to hearts of palm and mix well
Taste to make sure it is sweet
If not, add 1 tsp by tsp of sugar until it tastes sweet
Hearts of palm has different levels of saltiness due to brine
Add mayo and sour cream, mix well and set aside
Assembly
Spread a layer of hot rice on bottom of nonstick pan about 1/2 - 3/4 inch thick
If you are using a glass pan, cover the bottom and sides with foil
Sprinkle a thin layer of furikake on top of rice
Spread layer of salad mixture on top, covering up all rice
Bake approximately 20 - 25 minutes or until edges are brown
Allow to cool at least 15 - 20 minutes
I like to eat it at room temperature
Optional: sprinkle a little furikake on top to make it presentable
Cut seaweed into rectangles about 2
Inches x 4 inches
Some are sold already cut
They also have the pre-cut ones at trader joe's
To eat, scoop a half tablespoon size of baked sushi onto center of seaweed sheet and eat like a mini taco in one bite
