Healthy Peanut Butter Bars

Ingredients

  • 1 1/3 cup coconut flour
  • 1/2 cup melted coconut oil
  • 1/2 cup maple syrup (paleo) or monk fruit syrup (keto diet)
  • pinch sea salt

Preparation

  1. Mix all ingredients in a bowl until they can be held together. Pour the dough in a baking sheet with parchment paper. Press the dough until you cover the dish. Leave in the refrigerator until the layer is ready

  2. For the peanut butter layer: 1/2 cup peanut butter or 1 cup peanut butter fat free (PB powder with water - very creamy consistency! 3 tbsp melted coconut oil or 1/4 cup melted coconut oil if using peanut butter powder; 1/3 cup maple syrup (if using the 1/2 cup normal peanut butter); 2 tbsp flax seeds; pinch sea salt

  3. For the chocolate layer: 4oz vegan dark chocolate (120g); 1 tbsp coconut oil; OR make you own dark chocolate using: 1/2 cup cacao butter; 1/2 cup raw cacao powder; 1 tbsp coconut oil; sweetener of choice and for taste; pinch of sea salt

  4. Melt the chocolate or cacao butter and mix with the coconut oil and or remaining ingredients. Remove the dish from the refrigerator and pour the melted chocolate on top. Sprinkle some course salt on top if you’d like and return it to the refrigerator until firm. Then cut it into bars! Enjoy
