Homemade Smooth Vegetable Soup

Ingredients

  • 3 tbsp of oil
  • 1 large onion
  • 2 sticks of celery
  • 1 garlic clove grated
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp garlic salt (use normal salt if you don't have this)
  • 600g vegetables of your choice
  • 300ml vegetable stock (dissolve 1 stock cube in 300ml water)
  • 5 - 6 tbsp double cream

Optional garnish

  • caramelised onion + coriander

Preparation

  1. In a pressure cooker, add 3 tbsp oil. Once hot, add the onion, celery, grated garlic and saute until lightly brown.

  2. Next, add the herbs and spices - 1/2 tsp each of thyme, black pepper and garlic salt. Let the herbs saute for a minute and then add your chosen vegetables and mix well.

  3. Prepare 300ml of vegetable stock and add it to the pressure cooker. Stir well, put the lid on and pressure cook for 10 minutes until the vegetables are cooked through.

  4. Remove the pressure cooker lid and use a handheld blender to puree the vegetables, don't puree all if you want some texture.

  5. Lastly, stir in 5 - 6 tbsp double cream. Taste and adjust salt if necessary.

  6. Add caramelised onions and chopped coriander on top and serve with bread. Enjoy!
