Homemade Thai Peanut Vinaigrette Dressing

Ingredients

  • 1/4 cup smooth sunflower seed butter or peanut butter (natural, no-added-sugar variety)
  • 1/4 cup tamari (low-sodium variety)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons honey, agave or other liquid sweetener (plus more to taste)
  • 2" piece ginger, peeled and minced or grated
  • 2 teaspoons toasted sesame oil, optional but recommended
  • 1 clove garlic, peeled & roughly chopped
  • 1/8 teaspoon crushed red pepper flakes optional, adds some spice
  • 1/2 tsp salt
  • water to consistency (1/4 cup)

Preparation

  1. Blend the dressing ingredients until smooth and emulsified.

  2. Use on any grain, green or vegetable.
