Homemade Thai Peanut Vinaigrette Dressing
Ingredients
- 1/4 cup smooth sunflower seed butter or peanut butter (natural, no-added-sugar variety)
- 1/4 cup tamari (low-sodium variety)
- 3 tablespoons fresh lemon juice
- 2 tablespoons honey, agave or other liquid sweetener (plus more to taste)
- 2" piece ginger, peeled and minced or grated
- 2 teaspoons toasted sesame oil, optional but recommended
- 1 clove garlic, peeled & roughly chopped
- 1/8 teaspoon crushed red pepper flakes optional, adds some spice
- 1/2 tsp salt
- water to consistency (1/4 cup)
Preparation
Blend the dressing ingredients until smooth and emulsified.
Use on any grain, green or vegetable.
