Hot Cross Buns
Ingredients
- 14g dried yeast
- > 1 tsp maple syrup > 1/2 cup warm water
- > 3 3/4 cups gf all purpose flour > 2 tsp mixed spice
- > 2 tsp ground cinnamon > 100g sultanas/raisins (or choc chips)
- > 1/4 cup coconut oil, melted > 3/4 -1 cup water
- 1/3 cup gf flour
- > 1 tbsp maple syrup > 2 tbsp warm water
Preparation
Combine yeast, maple syrup, and water in jug and stir to combine. Set aside in a warm place until mixture foams
In large mixing bowl add flour, spices, sultanas, coconut oil, water and yeast, mix until combined. Lightly flour bench, turn out dough & knead for 5 mins until smooth. Place in lightly greased bowl, cover & sit in a warm place for 1 hour until doubled in size
Preheat oven to 180°C (356°F). Divide the dough into 12 even pieces, roll into balls and arrange on baking tray (I lined our baking tray with these reusable silicone sheets from @agreenaworld, rather than baking paper. They're really good!) Cover & allow to rise again for 30 mins
In a small bowl mix the paste ingredients together then, using a spoon or piping bag, draw crosses on buns. Bake for 30 mins
For the glaze, brush hot buns with maple syrup. Enjoy
