Indian Fakeaway - Sweet Potato + Spinach Madras + Rice

Ingredients

  • 500g sweet potatoes, peeled and chopped
  • half bag spinach
  • 4 tbsp madras curry paste
  • 5 cloves garlic, peeled and minced
  • 1/2 cup full fat coconut milk
  • 1 cup chopped tomatoes
  • rice, to serve
  • salt, pepper to taste
  • optional:
  • coriander to top
  • 2 tbs cashew butter
  • 1 onion, diced

Preparation

  1. Start with some coconut oil or vegetable broth, if you want to avoid oil

  2. Heat it in a saucepan or skillet, then add garlic and onion

  3. Fry both for around 3 minutes, then add sweet potatoes

  4. Cook for about 2 minutes more

  5. Add chopped tomatoes, coconut milk, madras curry paste, and optional cashew butter

  6. Bring to a cook again for about 15 minutes, or till sweet potato is tender

  7. Add spinach in last 5 minutes of cooking

  8. Season with salt and pepper and top with optional coriander

  9. It’s rich, filling, creamy, fast, one pot, and an absolute must make for anyone who loves indian food

  10. Sooo many indian curries can be made just as good with vegan ingredients - give it a go yourself, you won't be disappointed! ?
