Jamaican Inspired Jerk Lentils

Ingredients

  • 1 cup dry lentils (I used black lentils)
  • 1/2 a red onion, diced
  • 1 red bell pepper, diced
  • 1 inch ginger, minced
  • 5 cloves garlic, minced
  • 1 15oz can of diced tomatoes
  • 1 1/2 tbsp jerk seasoning
  • 2 tsp brown mustard
  • 2 tsp maple syrup
  • 3 cups mushroom or vegetable broth
  • Juice of 1/2 a lime
  • Zest of one lime

Preparation

  1. In a medium pot at in onion and sauté until softened

  2. Add in ginger, garlic and bell pepper and sauté until fragrant

  3. Add in lentils, tomatoes, jerk seasoning, mustard and maple syrup

  4. Stir to combine and then add broth

  5. Bring mixture to a boil and reduce to a simmer

  6. Cover lentils and allow to cook for 25 minutes or until most of liquid is absorbed by lentils

  7. Add in lime zest and lime juice, stir and remove from heat to serve
