Korean Japchae Glass Noodle Stir-Fry
Ingredients
- 100g Korean glass noodles
- thinly sliced onion
- thinly sliced carrot
- shiitake mushrooms, or sirloin steak if not vegan
- leafy greens, usually spinach
Sauce
- 2 tbsp sesame oil
- 3 tbsp light soy sauce
- 2 tbsp sugar
- 1 tsp white sesame seeds
Preparation
Prepare the sauce by mixing sesame oil, light soy sauce, sugar, and white sesame seeds in a bowl.
Cook the Korean glass noodles according to package instructions, then drain and rinse under cold water.
In a pan, sauté the thinly sliced onion, carrot, shiitake mushrooms, and leafy greens until tender.
Add the cooked noodles and sauce to the pan, stir-fry until everything is well combined and heated through.
Serve the japchae immediately.
Tips
The sauce combination of soy sauce, sesame oil, and sugar is key for maximum flavor and umami.
