Korean Omelet

Ingredients

  • 2 tbsp snipped nori
  • 1/3 cup chopped carrot
  • 1 cup liquid egg replacer (the kind that tastes and looks like egg)
  • a generous pinch of each salt & pepper
  • 1 slice of vegan cheese

Preparation

  1. Mix the nori, carrot, egg replacer, salt & pepper in a bowl

  2. Grease a rectangular pan and add part of the vegan egg mixture

  3. Add 1/4 slice of vegan cheese, then fold as shown in the video and repeat

  4. Slice the omelet and serve in a bowl with brown rice and veggies
