Lemon Blueberry Oat Muffins

Ingredients

Wet

  • 1 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 large egg
  • 1 tsp vanilla
  • 1/3 cup maple syrup
  • 1/4 cup olive oil
  • 2 tbsp lemon juice

Dry

  • 1 tbsp lemon zest
  • 1 cup rolled oats
  • 3/4 cup whole wheat flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • sprinkle sea salt

Add-ins

  • 1-2 cups fresh blueberries

Preparation

  1. Preheat oven to 375°F.

  2. In a large bowl, combine the wet ingredients: Greek yogurt, almond milk, egg, vanilla, maple syrup, olive oil, and lemon juice.

  3. Add the dry ingredients: lemon zest, rolled oats, whole wheat flour, baking powder, baking soda, and sea salt.

  4. Stir in the fresh blueberries.

  5. Bake for 18-20 minutes.

Tips

  1. Do not use liners; instead, thoroughly grease the muffin tin to prevent sticking.
