Lemon Blueberry Oat Muffins
Ingredients
Wet
- 1 cup Greek yogurt
- 1/4 cup almond milk
- 1 large egg
- 1 tsp vanilla
- 1/3 cup maple syrup
- 1/4 cup olive oil
- 2 tbsp lemon juice
Dry
- 1 tbsp lemon zest
- 1 cup rolled oats
- 3/4 cup whole wheat flour
- 1/2 tsp baking powder
- 1 tsp baking soda
- sprinkle sea salt
Add-ins
- 1-2 cups fresh blueberries
Preparation
Preheat oven to 375°F.
In a large bowl, combine the wet ingredients: Greek yogurt, almond milk, egg, vanilla, maple syrup, olive oil, and lemon juice.
Add the dry ingredients: lemon zest, rolled oats, whole wheat flour, baking powder, baking soda, and sea salt.
Stir in the fresh blueberries.
Bake for 18-20 minutes.
Tips
Do not use liners; instead, thoroughly grease the muffin tin to prevent sticking.
