Lentil and Mushroom Taquitos

Ingredients

  • 1 tbs of olive oil
  • 2 cloves of minced garlic
  • 3 1/2 cups of sliced white mushrooms
  • 1 cup of cooked green lentils
  • 1 tbs of chili powder
  • 1 tsp of cumin powder
  • 1/2 tsp of salt
  • 1/2 tsp of oregano
  • 1/2 tsp of black pepper
  • 1/2 cup of minced yellow onion
  • 1 minced jalapeño
  • flour tortillas

Preparation

  1. In a pan on medium heat add olive oil and garlic, cook until fragrant and add mushrooms, lentils, and seasoning

  2. Stir well and allow to cook for 5 to 8 minutes stirring occasionally

  3. Once time is up transfer filling into a blender

  4. Give filling a few good pulses but avoid over pulsing

  5. Next add onion and jalapeño and mix in to filling

  6. Preheat oven to 400°

  7. Grab tortillas and with a spoon scoop filling onto each tortilla, evenly shape filling and roll up taquitos tightly

  8. Place in oven for 10-15 minutes each side

  9. Once time is up remove from oven

  10. Garnish with sauce of choice and enjoy

  11. Frying directions- to fry preheat oil to 350° in a large pot

  12. Once oil is ready place taquitos into pot three at a time and fry for two minutes each side

  13. Allow taquitos to cool and drip dry for a few minutes

  14. Enjoy
