Lentil and Mushroom Taquitos
Ingredients
- 1 tbs of olive oil
- 2 cloves of minced garlic
- 3 1/2 cups of sliced white mushrooms
- 1 cup of cooked green lentils
- 1 tbs of chili powder
- 1 tsp of cumin powder
- 1/2 tsp of salt
- 1/2 tsp of oregano
- 1/2 tsp of black pepper
- 1/2 cup of minced yellow onion
- 1 minced jalapeño
- flour tortillas
Preparation
In a pan on medium heat add olive oil and garlic, cook until fragrant and add mushrooms, lentils, and seasoning
Stir well and allow to cook for 5 to 8 minutes stirring occasionally
Once time is up transfer filling into a blender
Give filling a few good pulses but avoid over pulsing
Next add onion and jalapeño and mix in to filling
Preheat oven to 400°
Grab tortillas and with a spoon scoop filling onto each tortilla, evenly shape filling and roll up taquitos tightly
Place in oven for 10-15 minutes each side
Once time is up remove from oven
Garnish with sauce of choice and enjoy
Frying directions- to fry preheat oil to 350° in a large pot
Once oil is ready place taquitos into pot three at a time and fry for two minutes each side
Allow taquitos to cool and drip dry for a few minutes
