Local Herbed Hasselback Potatoes


  • 2 potatoes
  • 6 cloves garlic
  • Fresh sage
  • Fresh parsley
  • Sea salt
  • Olive or coconut oil (for oil-free version I've used a few tablespoons of hearty salted vegetable broth)


  1. Preheat oven to 450 degrees

  2. Slice your potatoes almost to the bottom every 1/4 inch. Chop garlic and fresh herbs. Drizzle oil or vegetable broth over the potatoes and rub it around. Place on baking sheets and bake for 35 minutes. Take potatoes out and stuff slices with garlic and herbs. Drizzle a little more oil or broth on top and put back in oven for 30 more minutes. Serve warm
