Low-Calorie Chocolate Cake

Ingredients

  • 1 cup flour
  • 6 tbsp cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup xylitol
  • 1/4 cup yogurt (I used Alpro Greek yogurt)
  • 3/4 cup water
  • 3 vegan eggs from @alosrasupermarket
  • 2 tsp pure vanilla extract

Preparation

  1. Preheat the oven to 180 degrees C and grease a baking tray or cups. Set them aside.

  2. In a large bowl, combine the flour, cocoa powder, baking soda, salt, and sweetener. Stir well.

  3. In a separate bowl, whisk together the vegan eggs, yogurt, water, and vanilla.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. Pour the batter into the greased baking tray and bake for 25 minutes or until the cake has risen and a toothpick inserted into the center comes out mostly clean.

  6. Allow the cake to cool completely before removing it from the tray to prevent crumbling.

  7. Enjoy!
