Maple Roasted Carrots

Ingredients

  • 500 g whole carrots
  • 2 tbsp olive oil
  • 2 tbsp pure maple syrup
  • salt and pepper to taste
  • fresh herbs like parsley or mint for serving, optional

Preparation

  1. Preheat oven to 200°c/400f

  2. Place carrots on a baking sheet (use a baking sheet with sides so oil does not drip off)

  3. Drizzle olive oil over carrots, tossing by hand (or use pastry brush) to help distribute evenly

  4. Repeat with maple syrup

  5. Add salt and pepper as desired

  6. Roast for 20 minutes or until fork slides in easily

  7. Serve with fresh parsley or other herbs if desired
