Marinated Semi-Dried Tomatoes
Ingredients
- box of cherry tomatoes
- 5 cups of olive oil (half extra virgin)
- roughly chopped bulb of garlic
- 3/4cup of @willysacv
- a mix of dried parsley
- oregano and basil
- @maldonsalt
- caster sugar and black pepper
Preparation
Well after painstakingly slicing them in half, laying out in every baking tray I own and dehydrating in my oven at 80°c for about 8 hours the tomatoes have shrunk in size and intensified in flavour.
I've now coated them in a delicious marinade made as follows:
Heat up about 1.5 cups of olive oil (half extra virgin) to 85°c with a roughly chopped bulb of garlic. Leave to cool down then add about 3/4cup of @willysacv , a mix of dried parsley, oregano and basil, @maldonsalt , caster sugar and black pepper.
These will now go into a sterilised @kilneruk for storage in my fridge and I'll be using these on some pizzas very soon!
