Marinated Semi-Dried Tomatoes

Ingredients

  • box of cherry tomatoes
  • 5 cups of olive oil (half extra virgin)
  • roughly chopped bulb of garlic
  • 3/4cup of @willysacv
  • a mix of dried parsley
  • oregano and basil
  • @maldonsalt
  • caster sugar and black pepper

Preparation

  1. Well after painstakingly slicing them in half, laying out in every baking tray I own and dehydrating in my oven at 80°c for about 8 hours the tomatoes have shrunk in size and intensified in flavour.⁣

  2. I've now coated them in a delicious marinade made as follows:⁣

  3. Heat up about 1.5 cups of olive oil (half extra virgin) to 85°c with a roughly chopped bulb of garlic. Leave to cool down then add about 3/4cup of @willysacv , a mix of dried parsley, oregano and basil, @maldonsalt , caster sugar and black pepper.⁣

  4. These will now go into a sterilised @kilneruk for storage in my fridge and I'll be using these on some pizzas very soon!⁣
