Marinated Tofu Pineapple Kebabs
Ingredients
- extra firm tofu
- pineapple
- assorted vegetables
Marinade
- 1/4 cup olive oil
- 1/4 cup coconut aminos
- 1 tablespoon maple syrup
- 2 garlic cloves minced
- 1 teaspoon liquid smoke
- 1/2 teaspoon ground ginger
Preparation
Mix the marinade ingredients together in a bowl.
Cut the tofu, pineapple, and vegetables into bite-sized pieces.
Thread the pieces onto skewers to assemble the kebabs.
Place the kebabs in the marinade and let them marinate for about 4 hours.
Grill the kebabs for about 15 minutes, turning occasionally, until cooked through.
After grilling, season with salt and pepper to taste and add red pepper flakes.
Tips
Use any vegetables you prefer, such as bell peppers or onions.
