Marvelous Matcha Pinwheel Cookies

Ingredients

  • 1 cup butter softened
  • 1/2 cup cane sugar*
  • 2 eggs
  • 1 tsp vanilla
  • 3 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 1/2 tbsp matcha powder (sifted)

Preparation

  1. Whip the wet ingredients in a large bowl

  2. Sift and add the dry ingredients (except matcha powder)

  3. Mix until everything combines into a nice cookie dough

  4. Take out half of the dough and ball it up

  5. Then wrap it in cling film and refrigerate

  6. Sprinkle in the matcha powder into the dough-filled bowl

  7. Mix until the dough turns green

  8. Ball your matcha dough and wrap it up

  9. Pop it into the fridge (for 15-20 mins or until it stiffens)

  10. Divide both dough balls in half

  11. Roll each of them into a long rectangle

  12. Make sure that it retains a uniform shape throughout by smoothening the cracks and tucking in the edges

  13. After that lay the white layer over the green and vice versa

  14. Trim off the rims to give it an even look

  15. Gently roll your dough into a log

  16. Use a plastic wrap to make this easier)

  17. Lay one white over one green and vice versa

  18. Place logs on a tray and refrigerates for approx

  19. Preheat oven to 325®c

  20. Take out the logs and slice off 1/4 inch of the log to create cookies

  21. Place them on baking sheets

  22. Bake for 12-14 minutes

  23. Rotate the sheets to ensure they are baked evenly)

  24. Watch the oven after 10 minutes to prevent them from getting burnt

  25. Let them cool on a wire rack before serving
