Marvelous Matcha Pinwheel Cookies
Ingredients
- 1 cup butter softened
- 1/2 cup cane sugar*
- 2 eggs
- 1 tsp vanilla
- 3 cups flour
- 1/2 tsp baking powder
- 1/2 tsp sea salt
- 1 1/2 tbsp matcha powder (sifted)
Preparation
Whip the wet ingredients in a large bowl
Sift and add the dry ingredients (except matcha powder)
Mix until everything combines into a nice cookie dough
Take out half of the dough and ball it up
Then wrap it in cling film and refrigerate
Sprinkle in the matcha powder into the dough-filled bowl
Mix until the dough turns green
Ball your matcha dough and wrap it up
Pop it into the fridge (for 15-20 mins or until it stiffens)
Divide both dough balls in half
Roll each of them into a long rectangle
Make sure that it retains a uniform shape throughout by smoothening the cracks and tucking in the edges
After that lay the white layer over the green and vice versa
Trim off the rims to give it an even look
Gently roll your dough into a log
Use a plastic wrap to make this easier)
Lay one white over one green and vice versa
Place logs on a tray and refrigerates for approx
Preheat oven to 325®c
Take out the logs and slice off 1/4 inch of the log to create cookies
Place them on baking sheets
Bake for 12-14 minutes
Rotate the sheets to ensure they are baked evenly)
Watch the oven after 10 minutes to prevent them from getting burnt
Let them cool on a wire rack before serving
