Meaty Oyster Mushroom and Pea Hummus Toast

Ingredients

  • Sourdough bread
  • 280 g peas, defrosted
  • 10 g fresh lemon balm
  • 3 Tbsp tahini
  • 2 Tbsp lemon juice
  • 1 garlic clove
  • 1/2 tsp sea salt
  • Pinch of black pepper
  • 250 g oyster mushrooms
  • 1 Tbsp tamari or soy sauce
  • 1 Tbsp maple syrup
  • 1 Tbsp apple vinegar
  • 1/2 Tbsp sesame oil

Preparation

  1. Toast the sourdough bread.

  2. Mix all pea hummus ingredients in a blender until smooth. Add salt and pepper to taste.

  3. Make a marinade from the tamari, maple syrup, apple vinegar, and sesame oil.

  4. Pull the oyster mushrooms into strips and let them marinate for 10 minutes.

  5. Fry the mushrooms in a pan until they start to caramelize.

  6. Assemble by spreading the hummus on the toasted bread and topping with the mushrooms.
