Meaty Oyster Mushroom and Pea Hummus Toast
Ingredients
- Sourdough bread
- 280 g peas, defrosted
- 10 g fresh lemon balm
- 3 Tbsp tahini
- 2 Tbsp lemon juice
- 1 garlic clove
- 1/2 tsp sea salt
- Pinch of black pepper
- 250 g oyster mushrooms
- 1 Tbsp tamari or soy sauce
- 1 Tbsp maple syrup
- 1 Tbsp apple vinegar
- 1/2 Tbsp sesame oil
Preparation
Toast the sourdough bread.
Mix all pea hummus ingredients in a blender until smooth. Add salt and pepper to taste.
Make a marinade from the tamari, maple syrup, apple vinegar, and sesame oil.
Pull the oyster mushrooms into strips and let them marinate for 10 minutes.
Fry the mushrooms in a pan until they start to caramelize.
Assemble by spreading the hummus on the toasted bread and topping with the mushrooms.
