“Meaty” Oyster Mushroom, Lemon Balm Pea Hummus on Toasted Sourdough Bread
Ingredients
- 280 g peas, defrosted
- 10 g fresh lemon balm
- 3 tbsp tahini
- 2 tbsp lemon
- 1 garlic clove
- 1/2 tsp sea salt
- pinch of black pepper
Preparation
Mix all ingredients in a blender until smooth. Add salt and pepper to taste
For the meaty mushrooms: 250 g oyster mushrooms, 1 tbsp tamari or soy sauce, 1 tbsp maple syrup, 1 tbsp apple vinegar, 1/2 tbsp sesame oil
Make a marinade from the tamari, maple syrup, apple vinegar and sesame oil
Pull mushrooms into stripes and let them marinate for 10 minutes
Fry in the pan until they start to caramelize
