Millionaire Shortbread Protein Bars ๐Ÿซ๐Ÿ’š

Ingredients

Base Layer

  • 1/2 cup of oats ๐Ÿฅฃ
  • 1-2 scoops of protein powder (Millionaire Shortbread flavor from @theproteinworks) ๐Ÿ’ช๐Ÿผ
  • 1 tbsp ground flax seed
  • 1 tbsp pumpkin seeds (can substitute with other nuts)
  • 1 tbsp almond/peanut butter ๐Ÿฅœ
  • 3 dates ๐ŸŒด (soft or soaked in warm water)

Date Caramel

  • 1/2 cup of dates
  • Water
  • Pinch of salt

Topping

  • Dark chocolate ๐Ÿซ

Preparation

Prepare Base Layer

  1. Blend oats, protein powder, and ground flax until fine.

  2. Add dates and peanut butter, pulse to combine.

  3. Add water/sweetener and pulse until mixture comes together.

  4. Pulse in pumpkin seeds.

  5. Press into a flat layer on lined baking sheet/tray.

Make Date Caramel

  1. Blend dates with water and salt until caramel consistency.

  2. Spread over the base layer.

  3. Freeze for 20-30 minutes.

Add Chocolate Topping

  1. Melt dark chocolate and spread over the date caramel layer.

Enjoy and Store

  1. Store in the fridge for up to a week.
