Millionaire Shortbread Protein Bars π«π
Ingredients
Base Layer
- 1/2 cup of oats π₯£
- 1-2 scoops of protein powder (Millionaire Shortbread flavor from @theproteinworks) πͺπΌ
- 1 tbsp ground flax seed
- 1 tbsp pumpkin seeds (can substitute with other nuts)
- 1 tbsp almond/peanut butter π₯
- 3 dates π΄ (soft or soaked in warm water)
Date Caramel
- 1/2 cup of dates
- Water
- Pinch of salt
Topping
- Dark chocolate π«
Preparation
Prepare Base Layer
Blend oats, protein powder, and ground flax until fine.
Add dates and peanut butter, pulse to combine.
Add water/sweetener and pulse until mixture comes together.
Pulse in pumpkin seeds.
Press into a flat layer on lined baking sheet/tray.
Make Date Caramel
Blend dates with water and salt until caramel consistency.
Spread over the base layer.
Freeze for 20-30 minutes.
Add Chocolate Topping
Melt dark chocolate and spread over the date caramel layer.
Enjoy and Store
Store in the fridge for up to a week.
