Mozzarisella Blue & Roasted Aubergine Tagliatelle
Ingredients
- 1 tub of mozzarisella blue.
- 1 aubergine.
- 1 medium red onion - chopped.
- 2 cloves of garlic - minced.
- generous pinch of pink salt.
- season with black pepper.
- tagliatelle.
Preparation
Slice the aubergine & coat in olive oil & a little pink salt
Roast for 25 minutes 200⁰c
Fry the onion & garlic for a few minutes to soften
Add the mozzarisella & a few tablespoons of the pasta water
Add the salt & pepper & stir until the cheese melts
Drain the pasta & add to the sauce with the aubergine
Stir & coat all the ingredients in the rich blue cheese sauce
Serve immediately with fresh bread & salad
