Mozzarisella Blue & Roasted Aubergine Tagliatelle

Ingredients

  • 1 tub of mozzarisella blue.
  • 1 aubergine.
  • 1 medium red onion - chopped.
  • 2 cloves of garlic - minced.
  • generous pinch of pink salt.
  • season with black pepper.
  • tagliatelle.

Preparation

  1. Slice the aubergine & coat in olive oil & a little pink salt

  2. Roast for 25 minutes 200⁰c

  3. Fry the onion & garlic for a few minutes to soften

  4. Add the mozzarisella & a few tablespoons of the pasta water

  5. Add the salt & pepper & stir until the cheese melts

  6. Drain the pasta & add to the sauce with the aubergine

  7. Stir & coat all the ingredients in the rich blue cheese sauce

  8. Serve immediately with fresh bread & salad
