Nigerian Porridge Beans with Pan Fried Plantain

Ingredients

  • soft precooked black eyed beans
  • tomatoes
  • onion
  • garlic
  • ginger
  • extra chilli pepper powder
  • palm oil
  • spices
  • dark soy sauce
  • salt

Preparation

  1. In a pan, toss in chopped onions, garlic, ginger and some palm oil.

  2. Add in tomatoes, chilli pepper, some salt and your spices (such as garlic powder, ginger powder, fenugreek powder, onion powder). Fry really well.

  3. Next, add in your already cooked beans and combine it all together.

  4. Add in soy sauce if desired (can skip this step).

  5. Mix well, taste and add more pepper powder or spices if needed.

  6. Leave to fry for a while on low heat or dish out your portion.

Tips

  1. Be careful with the amount of salt as it might turn out salty.

  2. This dish is spicy and flavorful; adjust spices to taste.

  3. Overall, it was well-received, and you can serve it for lunch or any meal.
