No-Bake Vegan Sugar Cookies

Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 3 tbsp. coconut sugar
  • 1/4 cup almond butter
  • 3 tbsp. almond milk

Buttercream

  • 1 cup organic powdered sugar
  • 1/2 cup Kite Hill Foods European Butter
  • 2 tbsp. pomegranate powder (optional)
  • sprinkles

Preparation

  1. Stir everything together, then flatten dough into a rectangle.

  2. Using a small circle cookie cutter, make 18 cookies.

Buttercream

  1. In a large bowl, blend the butter.

  2. Add the powdered sugar to the butter, 1/4 cup at a time.

  3. Once the butter and powdered sugar is combined, add in the pomegranate powder.

  4. Spread dollops of the buttercream in-between the cookies, coat the sides in sprinkles, and store in the freezer.
