No-Bake Vegan Sugar Cookies
Ingredients
- 1 cup almond flour
- 1/4 cup coconut flour
- 3 tbsp. coconut sugar
- 1/4 cup almond butter
- 3 tbsp. almond milk
Buttercream
- 1 cup organic powdered sugar
- 1/2 cup Kite Hill Foods European Butter
- 2 tbsp. pomegranate powder (optional)
- sprinkles
Preparation
Stir everything together, then flatten dough into a rectangle.
Using a small circle cookie cutter, make 18 cookies.
Buttercream
In a large bowl, blend the butter.
Add the powdered sugar to the butter, 1/4 cup at a time.
Once the butter and powdered sugar is combined, add in the pomegranate powder.
Spread dollops of the buttercream in-between the cookies, coat the sides in sprinkles, and store in the freezer.
