Nutty Bounty Bars

Ingredients

  • for the base:
  • 4x protein balls (@purabon choc coconut)
  • for the centre:
  • 1 cup desiccated coconut
  • 1/2 cup coconut flour
  • 1/2 cup coconut cream
  • 1 tbs coconut oil (melted)
  • 1/4 cup chopped nuts (i did almonds and hazelnuts)
  • for the ganache:
  • 60g dark chocolate
  • 1 tbs coconut cream
  • 1 tbs coconut oil

Preparation

  1. Zap your protein balls in the microwave for 20-30 seconds to soften

  2. Crumble them up and press them into a lined baking tin

  3. Set aside in the fridge

  4. Make your centre layer by adding all the ingredients to a bowl and stir until combined

  5. Spread over the base

  6. Put back in the fridge or freezer to set

  7. Make ganache by melting your dark chocolate then stirring in your coconut cream and coconut oil

  8. Put in the fridge to set

  9. Store in the fridge for you to a week or can be stored in the freezer for months
