Nutty Rice Cake Bars

Ingredients

  • 5 medjool dates
  • 1.5 cups peanut butter or preferred peanut butter
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1/3 cup pecans
  • 1 teaspoon cinnamon
  • 2-3 cups puffed rice or favorite cereal
  • 1/2 cup shredded coconut

Caramel sauce components

  • maple syrup
  • coconut oil
  • dates
  • almond butter or peanut butter
  • salt to taste

Preparation

  1. Add 5 medjool dates, 1.5 cups peanut butter, a pinch of salt, 1 teaspoon vanilla extract, 1/3 cup pecans, and 1 teaspoon cinnamon to a food processor and process until well combined.

  2. Mix 2-3 cups of puffed rice or your favorite cereal with 1/2 cup shredded coconut in a bowl.

  3. Combine the processed mixture from the food processor with the cereal and coconut mixture.

  4. Freeze the combined mixture for 30 minutes to 1 hour.

  5. For the caramel sauce, you can purchase it or blend maple syrup, coconut oil, dates, almond butter or peanut butter, and salt to taste until smooth; adjust as needed to achieve desired consistency.
