Nutty Rice Cake Bars
Ingredients
- 5 medjool dates
- 1.5 cups peanut butter or preferred peanut butter
- pinch of salt
- 1 teaspoon vanilla extract
- 1/3 cup pecans
- 1 teaspoon cinnamon
- 2-3 cups puffed rice or favorite cereal
- 1/2 cup shredded coconut
Caramel sauce components
- maple syrup
- coconut oil
- dates
- almond butter or peanut butter
- salt to taste
Preparation
Add 5 medjool dates, 1.5 cups peanut butter, a pinch of salt, 1 teaspoon vanilla extract, 1/3 cup pecans, and 1 teaspoon cinnamon to a food processor and process until well combined.
Mix 2-3 cups of puffed rice or your favorite cereal with 1/2 cup shredded coconut in a bowl.
Combine the processed mixture from the food processor with the cereal and coconut mixture.
Freeze the combined mixture for 30 minutes to 1 hour.
For the caramel sauce, you can purchase it or blend maple syrup, coconut oil, dates, almond butter or peanut butter, and salt to taste until smooth; adjust as needed to achieve desired consistency.
