Oatmeal Choco-Chip Cookies

Ingredients

  • 1 cup wholemeal flour (can substitute with normal flour)
  • 1 cup oats
  • 1 egg
  • 3 tbsp coconut oil
  • 1/4 cup stevia or brown sugar
  • 1/4 cup plant-based milk
  • 1 tsp baking powder
  • Choco-chips
  • Salt, cinnamon & nutmeg (optional)

Preparation

  1. In a bowl, mix the wholemeal flour, salt, cinnamon, and nutmeg.

  2. In another bowl, beat together the coconut oil, stevia/brown sugar, and baking powder.

  3. Combine both mixtures and gradually add the plant-based milk.

  4. Fold in the choco-chips and knead the dough until cookie dough forms. Shape into small cookies and place on an oven tray.

  5. Bake at 180°C for 9 minutes.
