Oil-Free Okra

Ingredients

  • 1 pound small, tender okra (you can use frozen - thaw and drain water) - cut into pieces or leave whole as desired
  • 2 small tomatoes, chopped
  • 1 yellow onion, chopped
  • 1 tsp ginger root, minced
  • 2 cloves garlic, minced
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper (aids digestion of turmeric)
  • 1/2 tsp masala (you can find the powdered variety)
  • 1/2 tsp red pepper flakes (or to taste) or cayenne pepper
  • 1 tsp Sea Salt, optional

Preparation

  1. In a nonstick pan - apply medium heat - add the chopped onion

  2. Cook until onion begins to soften and then add the ginger root, garlic, and cumin and cook for another minute

  3. Add tomatoes, turmeric and garam masala and cook for another minute, adding a tablespoon of water if the spices start to stick

  4. Add the roasted okra and salt, if you use it, stir well, and cook for another 5 to 10 mins depending on how cooked you would like the #okra to be
