One Pot Pasta

Ingredients

  • 3 garlic cloves
  • evoo
  • 2 1/2 cups veggie broth
  • 1 can coconut milk
  • 1 8 oz box of spaghetti
  • grape tomatoes
  • 1 lemon juiced
  • salt & pepper
  • chili flakes

Preparation

  1. Mince garlic up, sauté in large pot with evoo

  2. Add veggie paste with water and stir, add to pot along with the coconut milk and lemon juice

  3. Add the spaghetti and slowly push it down to be in the liquid. Don’t rush and break the pasta

  4. Place lid and let the pasta cook for 10 minutes. Check often and stir

  5. In the meantime slice up tomatoes and bake them for 10 minutes at 400F to wilt and soften. Chop up basil as well

  6. Once all the liquid is gone from the pot and the spaghetti is cooked it’s done! Add in the tomatoes, sprinkle salt, pepper, chili flakes on top and mix well

  7. Plate with chopped basil on top
