One Pot Spicy Rigatoni: Creamy Delight
Ingredients
- 1 lb rigatoni
- 6 oz tomato paste
- 1 cup milk (of choice)
- 2 1/2 cups water
- 3 tbsp butter
- 1 large shallot
- 3-4 cloves garlic
- 1 tsp or more red pepper flakes
Preparation
Heat a dash of oil in a large pot or Dutch oven over medium heat.
Add diced shallot and minced garlic to the pot. Sauté for 1-2 minutes.
Mix in tomato paste and butter.
Add water, milk, red pepper flakes, and uncooked rigatoni to the pot.
Bring the mixture to a boil.
Reduce the heat to medium-low and cook uncovered for about 15 minutes. Stir frequently to prevent the pasta from sticking to the bottom of the pot.
If needed, add an additional 1/2 cup of water during cooking to maintain the desired consistency.
