One Pot Spicy Rigatoni: Creamy Delight

Ingredients

  • 1 lb rigatoni
  • 6 oz tomato paste
  • 1 cup milk (of choice)
  • 2 1/2 cups water
  • 3 tbsp butter
  • 1 large shallot
  • 3-4 cloves garlic
  • 1 tsp or more red pepper flakes

Preparation

  1. Heat a dash of oil in a large pot or Dutch oven over medium heat.

  2. Add diced shallot and minced garlic to the pot. Sauté for 1-2 minutes.

  3. Mix in tomato paste and butter.

  4. Add water, milk, red pepper flakes, and uncooked rigatoni to the pot.

  5. Bring the mixture to a boil.

  6. Reduce the heat to medium-low and cook uncovered for about 15 minutes. Stir frequently to prevent the pasta from sticking to the bottom of the pot.

  7. If needed, add an additional 1/2 cup of water during cooking to maintain the desired consistency.
