Ooey Gooey Chocolate Chunk Banana Bread

Ingredients

  • 2 ripe bananas (mashed)
  • 1/2 cup Kite Hill unsweetened plain yogurt
  • 1/2 cup almond milk
  • 1/4 cup grapeseed oil or melted coconut oil
  • 1 flax egg (made with 2.5 tbsp water and 1 tbsp flax meal)
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup almond flour
  • 1 cup oat flour
  • 1/3 cup vegan chocolate chips or chocolate chunks

Preparation

  1. Preheat the oven to 350F and spray or line an 8x8 baking dish.

  2. In a large bowl, whisk together the wet ingredients and in a small bowl, whisk together the dry ingredients.

  3. Add the dry ingredients to the wet ingredients and stir until well combined, then fold in the chocolate chips or chunks.

  4. Pour the batter into the pan and top with additional chocolate if desired.

  5. Bake for 45 minutes and allow it to cool for at least 5 minutes before storing in the fridge. Enjoy!
