White Bean and Butternut Squash Stew

Ingredients

  • Organic Cannellini Beans
  • Organic Butternut Squash
  • Organic Onion
  • Organic Garlic
  • Organic Broccolini
  • Organic Broccoli Leaf
  • Fresh Organic Sage
  • Cumin
  • 1 tsp Concentrated Vegetable Broth
  • Salt and Pepper

Preparation

  1. Chop the onion, garlic, butternut squash, broccolini, and broccoli leaf into bite-sized pieces.

  2. In a large pot, sauté the chopped onion and garlic over medium heat until softened and fragrant.

  3. Add the cannellini beans, butternut squash, broccolini, broccoli leaf, sage, cumin, and 1 tsp of concentrated vegetable broth dissolved in water to make about 2 cups of broth.

  4. Season with salt and pepper to taste.

  5. Bring the mixture to a boil, then reduce heat and simmer for 20-30 minutes or until the vegetables are tender.
