Our Vietnamese Noodle Salad Jar

Ingredients

  • rice noodles
  • edamame beans
  • sliced red bell pepper
  • sliced cucumber
  • julienne peeled carrots
  • fresh basil
  • fresh mint
  • sliced chili or serrano peppers
  • sliced green onion
  • for mushrooms
  • 2 cups of sliced shittake mushroom caps
  • ginger soy sauce)
  • 4 tbs of soy sauce
  • 2 cloves of garlic
  • 1/2 tsp of sesame oil
  • 1/4 tsp of ground ginger

Preparation

  1. Place mushrooms in a bowl and add remaining ingredients into a pestle and mortar

  2. Grind until sauce is formed

  3. Pour sauce into bowl of mushrooms and roll until mushrooms are well coated

  4. Preheat oven to 400°f

  5. Marinate mushrooms covered in a fridge until oven is preheated

  6. Place mushrooms on a baking sheet and bake for 20 minutes

  7. Once time is up remove from oven and allow to cool for 5 minutes

  8. Layer jar starting with noodles followed by edamame beans, mushrooms, veggies, greens and peppers

  9. We served ours with a fresh batch of our ginger soy sauce

  10. Finish with sesame seeds
