Our Vietnamese Noodle Salad Jar
Ingredients
- rice noodles
- edamame beans
- sliced red bell pepper
- sliced cucumber
- julienne peeled carrots
- fresh basil
- fresh mint
- sliced chili or serrano peppers
- sliced green onion
- for mushrooms
- 2 cups of sliced shittake mushroom caps
- ginger soy sauce)
- 4 tbs of soy sauce
- 2 cloves of garlic
- 1/2 tsp of sesame oil
- 1/4 tsp of ground ginger
Preparation
Place mushrooms in a bowl and add remaining ingredients into a pestle and mortar
Grind until sauce is formed
Pour sauce into bowl of mushrooms and roll until mushrooms are well coated
Preheat oven to 400°f
Marinate mushrooms covered in a fridge until oven is preheated
Place mushrooms on a baking sheet and bake for 20 minutes
Once time is up remove from oven and allow to cool for 5 minutes
Layer jar starting with noodles followed by edamame beans, mushrooms, veggies, greens and peppers
We served ours with a fresh batch of our ginger soy sauce
Finish with sesame seeds
