Overnight Coconut Rice Pudding


  • To make 8
  • 8oz. jars/servings mix 4 cups leftover cooked brown rice with 3-4 cups coconut milk and 1/2 cup white chia seeds. Let set for 20 minutes while making the chia jam
  • or grab a jar of jam from your pantry and relax. (For blueberry lemon chia jam pictured I used 's date sweetened recipe from her newest book Plant Powered Families.) Once rice pudding is semi set
  • layer with jam in jars
  • put it in the fridge overnight
  • and let breakfast come together while you sleep
