Overnight Coconut Rice Pudding with Blueberry Jam
Ingredients
- 4 cups leftover cooked brown rice
- 3-4 cups coconut milk
- 1/2 cup white chia seeds
Blueberry jam components
- 2 cups blueberries
- 1 lemon juiced
- 1/4 cup chopped dates
- 2 tablespoons chia seeds
Preparation
Mix 4 cups leftover cooked brown rice with 3-4 cups coconut milk and 1/2 cup white chia seeds.
Let the mixture set for 20 minutes.
Prepare the blueberry lemon jam or use store-bought jam.
Once the rice pudding is semi-set, layer it with the jam in 8 oz jars.
Refrigerate overnight to set.
Jam
Mash 2 cups of blueberries
Add juice from one lemon and 1/4 cup chopped dates, then mix well
Stir in 2 tablespoons of chia seeds and let sit for 10 minutes to thicken
