Overnight Coconut Rice Pudding with Blueberry Jam

Ingredients

  • 4 cups leftover cooked brown rice
  • 3-4 cups coconut milk
  • 1/2 cup white chia seeds

Blueberry jam components

  • 2 cups blueberries
  • 1 lemon juiced
  • 1/4 cup chopped dates
  • 2 tablespoons chia seeds

Preparation

  1. Mix 4 cups leftover cooked brown rice with 3-4 cups coconut milk and 1/2 cup white chia seeds.

  2. Let the mixture set for 20 minutes.

  3. Prepare the blueberry lemon jam or use store-bought jam.

  4. Once the rice pudding is semi-set, layer it with the jam in 8 oz jars.

  5. Refrigerate overnight to set.

Jam

  1. Mash 2 cups of blueberries

  2. Add juice from one lemon and 1/4 cup chopped dates, then mix well

  3. Stir in 2 tablespoons of chia seeds and let sit for 10 minutes to thicken
