Peanut Sauce Vegetable Noodle Stir-Fry
Ingredients
- 12 oz frozen broccoli
- 6 oz frozen edamame
- 1 full package of rice noodles (about 11 oz)
- 2 tbsp peanut butter
- 2 tbsp soy sauce or tamari
- 1 tbsp sesame oil
- 2 tbsp roasted peanuts
- 2 tbsp water
Preparation
Steam the broccoli.
Boil the edamame and rice noodles according to package directions.
In a small bowl, whisk peanut butter, soy sauce, sesame oil, and 2 tablespoons water until combined.
With tongs, stir together noodles, veggies, and peanut sauce.
Sprinkle peanuts on top.
