Pearl Barley Risotto

Ingredients

  • pearl barley
  • fresh broccoli
  • sweet corn
  • edamame
  • frozen peppers or whatever veg u fancy
  • vegan pesto
  • nooch
  • squeeze of lemon

Preparation

  1. Cook pearl barley in veg stock for 20 mins

  2. Add fresh broccoli, sweet corn, edamame, frozen peppers or whatever veg u fancy

  3. Cook for a further 10 mins

  4. Stir through vegan pesto and sprinkle with nooch for dat b12 n some seasoning

  5. Add a squeeze of lemon if you’re feeling fancy
