Pearl Barley Risotto
Ingredients
- pearl barley
- fresh broccoli
- sweet corn
- edamame
- frozen peppers or whatever veg u fancy
- vegan pesto
- nooch
- squeeze of lemon
Preparation
Cook pearl barley in veg stock for 20 mins
Add fresh broccoli, sweet corn, edamame, frozen peppers or whatever veg u fancy
Cook for a further 10 mins
Stir through vegan pesto and sprinkle with nooch for dat b12 n some seasoning
Add a squeeze of lemon if you’re feeling fancy
