Pink Pancakes

Ingredients

  • 200ml coconut milk
  • some lemon juice
  • pinch of salt
  • 1/2 tsp baking powder
  • 5g chia seeds
  • 1 cooked beetroot
  • 60g spelt
  • 30g vegan protein
  • 1/2 tsp olive oil

Preparation

  1. In a mixer add 200ml coconut milk, some lemon juice, pinch of salt, 1/2 tsp baking powder, 5g chia seeds, 1 cooked beetroot

  2. Transfer into a bowl and add 60g spelt, 30g vegan protein, mix well with a fork

  3. Then in a pan add 1/2 tsp olive oil and transfer the mixture into pancake shape

  4. Add your favourite toppings and enjoy
