Pistachio Lime Matcha Vegan Ice Cream

Ingredients

  • 1/2 cup raw pistachios
  • 2 tbsp matcha powder
  • 2 tsp lime juice
  • 1/3 cup coconut milk
  • 1 cup coconut cream (thick)
  • 1/2 cup coconut condensed milk

Preparation

  1. Grind the pistachios with coconut milk into a fine paste

  2. In a stand mixture add coconut cream, coconut condensed milk, coconut milk, pistachios paste, matcha powder and blend it until smooth

  3. Make sure you mix it on a medium speed to get that creamy texture

  4. Once done add lime juice, mix well leave the mixture in the fridge for at least half an hour

  5. Bring back bowl to the stand mixture and blend again on a slow speed until mixture turns creamy and smooth

  6. Add in some pistachio crumble in the mold and fill it with the mixture

  7. Freeze it overnight or until it's set
