Protein Pumpkin Oat Bars: Healthy and Energizing Granola Bars

Ingredients

  • 1 cup mashed sweet potatoes
  • 1/3 cup pumpkin puree
  • 1/4 cup almond butter
  • 1 flax egg (1 Tbsp flax seeds + 3 Tbsp water)
  • 1 tsp pumpkin spice (or cinnamon)
  • 2 cups oats
  • 2 scoops (1/2 cup) protein powder (or 1/4 cup + 1 Tbsp almond flour + 1 Tbsp maple syrup)
  • Tip*: Optional addition of leftover pulp from juices for extra fiber

Preparation

  1. Mix all the wet ingredients (mashed sweet potatoes, pumpkin puree, almond butter, flax egg) until smooth.

  2. Add the oats and protein powder (or almond flour + maple syrup) to the wet mixture. Mix well to combine everything.

  3. If using, add the optional leftover pulp from juices and incorporate it into the mixture.

  4. Line a baking dish with parchment paper and transfer the mixture into the dish, spreading it evenly.

  5. Bake at 350F for 25 minutes.

  6. Turn off the oven and let the bars cook inside for an additional 5 minutes.

  7. Remove from the oven and let the bars cool completely before slicing.

  8. Once cooled, slice the bars into desired sizes.

  9. The bars can be refrigerated and stored for up to a week.
