Protein Zucchini Oats
Ingredients
- 1 cup instant/quick or rolled oats (100g)
- 1 medium zucchini (1 cup finely shredded, 176g)
- 13/4 cup water
- 1 scoop protein powder (1/4 cup, 30g) @questnutrition
- 1/4 tsp or 1 packet stevia sweetener (1g, = 2 tsp sugar, optional)
- pinch of salt
Preparation
Finely shred zucchini using a large-hole grater or food processor and squeeze out as much moisture as possible
Whisk together all ingredients in a saucepan over medium heat and cook uncovered for 2-3 minutes (instant) or 8-10 minutes (rolled), stirring occasionally
Transfer to a bowl, add protein powder and sweetener if using, and fold
Serve hot nuts, @dangfoods coconut chips and @lilys_sweets chocolate
