Pumpkin Donuts

Ingredients

  • 2 eggs whisked
  • 1 cup almond flour
  • 1/4 cup organic pumpkin
  • 3 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/2 tbsp coconut butter
  • 1/2 tbsp maple syrup
  • 1/2 tbsp unsweetened almond milk

Preparation

  1. Preheat oven to 350F

  2. In a bowl mix: 2 eggs whisked, 1 cup almond flour, 1/4 cup organic pumpkin, 3 tbsp maple syrup, 1 tsp baking powder, 1 tsp vanilla, 1 tsp cinnamon, 1/2 tsp pumpkin pie spice. Mix all the ingredients together, pour into a greased donut pan

  3. Bake for 20-22 minutes. Let them cool before popping them out of the pan

  4. When you put the donuts in the oven, make your icing because you want to let it sit for a minute

  5. Mix together: 1/2 tbsp coconut butter, 1/2 tbsp maple syrup, 1/2 tbsp unsweetened almond milk. Microwave for 30 seconds and stir together

  6. Let it sit and harden somewhat and then when the donuts have cooled a little, dip them in the icing

  7. You can eat right then of store in the fridge to let it harden. Recipe made 6-7 donuts
