Pumpkin Nourish Bowl with Roasted Vegetables

Ingredients

  • 2 potatoes
  • olive oil
  • mixed herbs
  • paprika
  • onion powder
  • garlic powder
  • salt and pepper
  • 1/2 cauliflower
  • cumin
  • curry powder
  • 1/4 small pumpkin
  • sesame oil
  • miso paste
  • broccolini
  • corn
  • black beans
  • cucumber
  • avocado
  • greens (e.g., rocket or arugula)
  • balsamic reduction or other dressing

Preparation

  1. Preheat your oven to 400°F.

  2. Peel and dice 2 potatoes and coat with olive oil, mixed herbs, paprika, onion powder, garlic powder, salt, and pepper.

  3. Evenly spread the potatoes onto a lined baking tray.

  4. Cut half a cauliflower into florets and coat with olive oil, paprika, cumin, onion powder, garlic powder, curry powder, salt, and pepper, then add to the tray.

  5. Cut 1/4 small pumpkin into thick slices and coat with a mixture of sesame oil and miso paste, then add to the tray.

  6. Place everything in the oven.

  7. At the 30-minute mark or when the cauliflower is golden, remove it from the oven.

  8. Allow the pumpkin and potatoes to cook for a total of 50-55 minutes or until golden.

  9. While baking, prepare any other vegetables of your choice, such as blanching broccolini, frying corn and black beans, and cutting cucumber and avocado.

  10. Assemble the bowl by placing a handful of greens (e.g., rocket or arugula) in first, followed by all remaining ingredients.

  11. Serve with balsamic reduction or another dressing of choice.
