Spiced Chickpea and Cauliflower Bowl
Ingredients
- 2-3 cups chopped cauliflower
- 2 cups chickpeas
- 1/2 cup loosely diced red onion
- olive oil
- salt
- pepper
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- a little cayenne (optional)
- greens (e.g., arugula)
- rice
- feta cheese
- olive oil and lemon dressing
- hot sauce (optional)
Preparation
Toss the cauliflower, chickpeas, and red onion in olive oil, salt, pepper, cumin, garlic powder, paprika, and optional cayenne.
Bake at 375°F for 30 minutes.
Serve with greens, rice, feta cheese, and a simple olive oil and lemon dressing.
Optionally, add hot sauce for extra flavor.
If chickpeas are difficult to digest, buy them dry and soak overnight or cook in an instant pot.
