Pumpkin Pie Crumble Bars

Ingredients

  • 1 package of pumpkin spice coconut cookies
  • 3/4 cup almond flour
  • 2 tbsp coconut oil
  • 1/4 tsp salt
  • pumpkin pie filling
  • 1/4 cup almond butter
  • 1/3 cup maple syrup
  • 1/2 cup almond milk
  • 3 tbsp arrowroot or tapioca starch
  • 1 tbsp pumpkin pie spice
  • 1 tsp vanilla extract

Preparation

  1. Crumble the cookies into a bowl

  2. Add the almond flour, coconut oil, and salt

  3. Mix with a fork until sticky and crumbly

  4. Press half into a lined loaf pan

  5. Set aside the rest for topping

  6. Whisk or blend the filling ingredients

  7. Pour on top of the crust

  8. Bake the bars for 20 minutes at 350ºF

  9. Remove from the oven and add the crumble

  10. Bake for another 25 minutes at 350ºF

  11. Cool, then chill overnight before slicing into squares
