Puppy Chow Sweet Rolls with a Vanilla Cream Glaze

Ingredients

  • 2 cups shredded mozzarella
  • 2 oz Philadelphia cream cheese
  • 3/4 cup almond flour
  • 2 tsp baking powder
  • 1 tsp vanilla
  • 1 Tbsp Lakanto monkfruit sweetener
  • 1 egg
  • 1/4 cup Nutlight
  • 2 Tbsp creamy peanut butter
  • 1/4 cup Slimfast vanilla cake batter powder
  • 1/4 cup unsweetened vanilla almond milk

Preparation

  1. Put mozzarella, cream cheese, almond flour, baking powder, vanilla, and sweetener in a bowl and microwave for 90 seconds. Mix until a ball of dough forms. Add egg and stir until combined

  2. Sprinkle some almond flour on your counter to keep dough from sticking and press dough into a large rectangle

  3. Put Nutilight and peanut butter in a bowl and microwave 30 seconds. Stir to combine. Spread on to dough

  4. Roll up dough starting on the short end. Slice into 1 inch thick buns and place on a greased baking dish. (For softer dough ~ place buns without any space in between. For crisper dough ~ place on a cookie sheet spread apart)

  5. Bake at 425° for 12-15 minutes or until golden brown

  6. Whisk together Slimfast powder and almond milk. Pour over sweet rolls while still warm
