Quick and Easy Miso Soup
Ingredients
- 4 cups / 1 l water
- 2 tbsp miso paste (white)
- 2 tbsp tamari (or Bragg’s liquid aminos or soy sauce)
- 0.5 vegetable bouillon cube
- 4 cremini or regular mushrooms
- 5 cm leek (white and green part)
- 2 scallions
Preparation
Bring the water to a boil in a pot and whisk in the miso paste, tamari and vegetable cube.
Lower the heat to a simmer.
Finely slice the mushrooms, leek and scallions, put in the broth and let simmer for about 10-15 minutes until the leeks are as tender as you like them.
