Quick and Easy Miso Soup

Ingredients

  • 4 cups / 1 l water
  • 2 tbsp miso paste (white)
  • 2 tbsp tamari (or Bragg’s liquid aminos or soy sauce)
  • 0.5 vegetable bouillon cube
  • 4 cremini or regular mushrooms
  • 5 cm leek (white and green part)
  • 2 scallions

Preparation

  1. Bring the water to a boil in a pot and whisk in the miso paste, tamari and vegetable cube.

  2. Lower the heat to a simmer.

  3. Finely slice the mushrooms, leek and scallions, put in the broth and let simmer for about 10-15 minutes until the leeks are as tender as you like them.
