Quick Chickpea Pasta with Vegetables
Ingredients
- Chickpea pasta (from eatbanza)
- 1 tablespoon olive oil
- Garlic
- Red pepper flakes
- Basil
- Spinach
- Tomatoes
- Leftover roasted Brussels sprouts
Preparation
Cook chickpea pasta according to package directions.
Sauté spinach and tomatoes in a pan until wilted
Mix the cooked pasta with 1 tablespoon olive oil, garlic, red pepper flakes, and basil
Add the sautéed vegetables and leftover Brussels sprouts to the pasta and toss to combine
