Quick Chickpea Pasta with Vegetables

Ingredients

  • Chickpea pasta (from eatbanza)
  • 1 tablespoon olive oil
  • Garlic
  • Red pepper flakes
  • Basil
  • Spinach
  • Tomatoes
  • Leftover roasted Brussels sprouts

Preparation

  1. Cook chickpea pasta according to package directions.

  2. Sauté spinach and tomatoes in a pan until wilted

  3. Mix the cooked pasta with 1 tablespoon olive oil, garlic, red pepper flakes, and basil

  4. Add the sautéed vegetables and leftover Brussels sprouts to the pasta and toss to combine
