Quorn Mafalde Pasta with Roast and Broccoli

Ingredients

  • Garofalo mafalde pasta, cooked
  • Quorn roast, cooked, sliced, and cut into triangles
  • Tender stem broccoli
  • 3 Laughing Cow extra light cheese triangles
  • Pasta water
  • Knorr vegetable stock pot
  • Chilli flakes
  • Chives

Preparation

  1. Cook the mafalde pasta according to package instructions and set aside.

  2. Cook the Quorn roast, slice it, and cut it into triangles.

  3. Cook the tender stem broccoli.

  4. In a pan, mix together the Laughing Cow cheese triangles and a little pasta water over low heat until it becomes a sauce.

  5. Add the Knorr vegetable stock pot to the sauce and stir well.

  6. Add the Quorn roast and broccoli to the sauce and stir until they are coated.

  7. Stir the sauce back through the cooked pasta and mix well.

  8. Sprinkle with chilli flakes and chives.
