Raspberry and White Chocolate Cookies

Ingredients

  • 3 tbsp melted ghee butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup plain flour
  • 1/2 cup oats
  • 1/2 cup frozen raspberries
  • 3/4 cup white chocolate chips

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a baking tray with baking paper.

  2. Add the butter, egg and vanilla extract to a bowl and mix well.

  3. In a separate bowl, combine the flour, sugar and oats then add to the wet mixture.

  4. Fold in the raspberries and chocolate chips then use a spoon to yield 6 cookies on the baking paper. They will flatten out in the oven so do not place too close together.

  5. Bake for 12-14 minutes until golden around the edges and leave to cool for 10 minutes before enjoying.
