Raw Chia Chocolate Bars


  • 1/2 cup dry absolute organic dates, pitted and soaked over night
  • 1/4 cup organic hazelnuts
  • 1/4 cup absolute organic brazil nuts
  • 1/4 cup absolute organic almonds
  • 1 tbsp absolute organic chia seeds
  • 2 tbsp absolute organic extra virgin coconut oil
  • 2 tbsp absolute organic cocoa butter
  • 1 tbsp absolute organic raw cacao powder
  • a pinch of sea salt
  • chunky crumbles of nuts and dates.


  1. Drain the dates well, chop them and place into the food processor, together with the hazelnuts, almonds and brazil nuts

  2. Crush the nuts before processing, if your machine is not very powerful

  3. Process to obtain sticky chunky crumbles of nuts and dates

  4. Add the cocoa butter, coconut oil, raw cacao powder, a pinch of sea salt, and pulse 3-4 times to incorporate

  5. Add the chia seeds and mix to incorporate using a wooden spoon

  6. Transfer the chocolate mixture on wax paper, cover it with another sheet of wax paper and use a rolling pin to roll it until you obtain the desired height

  7. Freeze for at least one hour, than use a sharp knife to cut the chocolate bars

  8. Keep in the freezer in plastic foil
